How To Hold A Pitmaster Knife Learning to safely handle your knife increases precision and efficiency in the kitchen. A hammer grip is the simplest and most natural way to hold a knife. Wrap all 5 fingers around the handle, making no contact with the blade. For more dexterity and control, consider the "pinch grip" - wrap your middle, pinky, and index finger around the handle, and put your bent index finger on one side of the blade, just ahead of the bolster, with your thumb on the other side "pinching" the blade between your two fingers.
